An appreciation for wine.

  • A great wine is made in the vineyard, not in the cellar, so the raw material produced on the soil must be treated with care and responsibility. The winemaker needs to know the grapes’ characteristics in order to develop them and translate them into Wine. We fill our presses only with the help of gravity and have banned cultured yeasts, steel tanks and temperature-control.

  • We rely only on spontaneous fermentation and give our wines all the time they need to mature in our huge, old wooden barrels. The long maturing process with the grape's natural yeasts combined with late bottling results in well-balanced, expressive and wholesome wines.
